Culinary Definitions

“DA LECCARSI I BAFFI”:  is an Italian phrase that mean “Good enough to lick one’s whiskers.” The equivalent to the southern phrase, “Lip Smacking Good!”

Tallow:  rendered beef fat similar to lard but from cow fat.

Stracciatella:  blend of cream & fresh mozzarella, the center of burrata.

Onion confit:  rich braised onions with balsamic vinegar & beef demiglace.

Pecorino cream:  sauce made with egg yolks & pecorino & parmesan cheeses.

Aioli:  fancy garlic mayonnaise.

Our New Detroit Pizzas are made with our 72 hour cold fermented dough. Our version starts with a soft focaccia style dough.  Plenty of cheese goes on next all of the way to the edges and the pizza is baked crispy.  Finally we finish the pizza off with hot pizza sauce.
